{Spicy} Cucumber-Lime Popsicles ๐Ÿ‹๐Ÿ‹๐Ÿ‹๐Ÿ‹๐Ÿ‹๐Ÿ‹๐Ÿ‹๐Ÿ‹๐Ÿ‹๐Ÿ‹๐Ÿ‹๐Ÿ‹๐Ÿ‹๐Ÿ‹
โ€ข ยฝ cup freshly squeezed lime juice (I used 6 limes)
โ€ข 1 cucumber, peeled
โ€ข ยฝ cup agave nectar
โ€ข 1 tbs finely grated ginger
โ€ข Tajin, for topping

Purรฉe ingredients together until smooth and strain through a fine-mesh strainer. Pour in popsicle molds & freeze at least 6 hours or overnight, until solid. Top with Tajin at your own risk.

Loaded Veggie Fried Rice

I make a variation of this recipe about every two to three weeks, mostly to use up the vegetables in my fridge. ย Even though prep for this meal does take a little bit since it involves a lot of chopping, itโ€™s worth it since everything comes together pretty quickly once you start cooking. ย I have found two fried rice recipes onย The Crunchy Radishย andย Edible Perspectiveย that I use as my base and adjust depending on the ingredients I have on hand. Leftovers should keep for about three days, but they may not last that long!
